1 Onion, finely diced
1/2 Cup good quality olive
3 Cloves fresh garlic, minced
1/4 Cup fresh basil, chopped
1/4 Teaspoon salt
1/4 Teaspoon coarse ground black pepper
1/8 Teaspoon red pepper flakes
1 Cup fresh tomatoes, diced
16 Ounces penne pasta, cooked to al dente
1 Cup grated parmesan cheese
1. Sauté the onion in 4 tablespoons of the olive oil until clear and tender, add the garlic and
cook for additional 30 seconds.
2. Toss all ingredients together with the remaining olive oil and parmesan cheese. Serve immediately with your favorite green salad and crusty bread.
